Ingredients

Salad

1 asparagus bunch, grated (enough for 23 cups)*
1 carrot, peeled and grated
1/2 apple (any kind), cored, grated
1/2 cup cilantro microgreens, chopped**
1/4 cup fennel bulb, thinly sliced or chopped***

Dressing

4 tablespoons olive oil
2 tablespoons maple syrup
2 tablespoons fresh lemon juice
1/41/2 teaspoon fine grey sea salt
1/81/4 teaspoon fresh ground pepper


Instructions

  1. In a large bowl, combine grated asparagus stems, carrot, apple, cilantro and fennel.
  2. Combine dressing ingredients in a small jar and shake well.
  3. Drizzle desired amount of dressing over salad just before serving.
  4. Decorate your salad with asparagus tops and garnishes.****
  5. Enjoy right away! 

Notes

Store leftovers in the fridge for up to 2 days. Add dressing just before eating.

* Reserve the asparagus tops to decorate your salad bowl(s).
** Regular cilantro is wonderful as well or use your favourite herb.
*** In a pinch, celery is a great substitute.
**** To garnish, you can add thinly sliced red onions or chopped green onions, radishes, sprouts, lime/lemon wedges, fresh herbs, etc.
