Comment on How To Make Maple Cream by Dana Leigh.

We made this tonight. I started off on Low-medium and it roiled over! Started a fire on the burner, lordy. We quickly transferred it to a taller pot and started on a new burner. It took forever to get up to 234. It would move up, then back down, move up, back down. FINALLY got it to 234, cooled to 100 and stirred for 30 minutes. It got to the peanut butter yellow stage and I think quickly went a tad bit too far as we had to spoon and push it into the jars instead of pour it in. Next time I’ll stir a little less. but it looks and taste great.
