I made this this morning and it’s delicious! Watching the video first was very helpful. I’m amazed that I could make a gluten free sourdough that held together enough to be baked as a boule. I toasted sunflower and pumpkin seeds before turning them.into flour in my vitamix, and it worked well. My loaf didn’t rise at all in 2 hours, so I let it go overnight, and this morning it had risen a lot. It baked up perfectly! Im.curious if there’s a benefit to baking it after only proofing for 2 hours. Thank you for the recipe. My only complaint is that I couldn’t stop eating it, and had to put it in the freezer so it was out of sight!
