No buckwheat, no brown rice flour. I actually use sorghum flour to make my sourdough. I use millet flour, sorghum flour, coconut flour, tiger nut flour, cassava flour. As far as starches, I only use tapioca starch or arrowroot starch. No potato starch. For sugar and syrup, I use monkfruit or erythritol and lakanto syrup.
