Hi, is it necessary to pour the liquid off that accumulates on the top? Can it be stirred in the starter?

Wild Yeast Bread (GF/V)
Hi Chantal, I love this recipe! It’s my go to for bread. The first few times I made it, it was great. The last couple times the dough seemed wetter. A little more sticky in working with it. The starter was somewhat liquidy, though not to bad. I remember using 1 cup of water when feeding the starter and the 1/4 cup at the end of mixing. After baking it was definitely a wetter crumb. This last time I used 3/4 cup instead of 1 cup of water and did not add the 1/4 cup water because the dough came together nicely and wasn’t to dry and easy to handle. Is it necessary to add the 1/4 cup water if felt not needed? It’s also very humid where we live if that might make a difference. Thanks, Charlene
